Veg Kathi roll is an easy homemade recipe that even learners can make. Though preparation may take time, but the method of making veg kathi roll is quite easy.

It is a delicious snack that everyone enjoys eating, especially your kids. You can pack veg kathi roll for lunch. To make kathi roll, you don’t need many ingredients. You can make it with the ingredients available in the home.

Veg kathi roll can be made either using potatoes or paneer as the main ingredients. This veg kathi roll recipe uses potatoes as the main ingredient. You can also replace paneer with potatoes. If you have basic knowledge about cooking, you surely know how to use paneer with potatoes.

Vege Kathi Roll: Ingredients

  • Whole wheat flour- 2 cups
  • Water- 1 cup
  • Cheese


  • Cauliflower- half medium size
  • Carrot- one medium size
  • Potatoes- 2 medium size
  • Green peas- half cup
  • Capsicum- half medium size
  • Onion- one and half medium size
  • Tomatoes- 1 large
  • French beans
  • Coriander leaves


  • Oil- 3 tablespoon
  • Carom seeds- 1/4 teaspoon
  • Cumin seeds- 1/4 teaspoon
  • Ginger garlic paste- 1 teaspoon
  • Turmeric powder- 1/3 teaspoon
  • Chill powder- 1/2 teaspoon
  • Coriander powder- 1/2 teaspoon
  • Garam masala- 1 teaspoon
  • Chaat masala- 1/2 teaspoon
  • Lemon juice- 3/4 teaspoon
  • Salt


Step 1:

The first step is to kneading dough. For that, take a big bowl then add two cups of white flour, few pinches of salt, and one tablespoon of oil. Pour half cup of water into the bowl, then begin to knead. After a while, add another half cup of water, then knead to smooth dough.

Step 2:

You can adjust the water if required. Keep kneading the dough until it gets soft. After then cover the bowl with a lid for about 20 minutes.

Step 3:

Meanwhile, you can prepare the stuffing of veg kathi roll. For that, rinse all the vegetables in the bowl. You may also use a colander to rinse them.


Step 4:

Peel the potatoes, then chopped them into cubes. Chop all the vegetables into fine pieces. You need half a cup of chopped carrots, one cup of cauliflower, a quarter cup of French beans, and a half cup of peas.

Step 5:

Add all these vegetables to a pressure cooker with one and a half cups of water. Pressure cook all the vegetables for 3 whistles. It might take around 12 minutes.

Step 6:

Meanwhile, you can marinate onions. You will need half medium size onion. Chop the onion into medium pieces. In a bowl, add chopped onion, half teaspoon chaat masala, chili powder as per your taste, and lemon juice. Mix it well with a spoon. Cover it with a bowl and keep it aside, you will need it later.

Step 7:

After three whistles, vegetables must have been cooked. Then transfer the vegetables to the bowl.

Step 8:

Now you can start to prepare stuffing for the veg kathi roll. Take a pan and heat it in a medium flame with two tablespoons of oil.

Step 9:

After few seconds, you can add one-fourth teaspoon of carom seeds and one-fourth teaspoon of cumin seeds. Stir and fry for few seconds.

Step 10:

After the cumin seeds splutter, add one medium-sized chopped onion into the pan. Fry the onion until they turn golden brown. Keep stirring so that you don’t burn the onions.

Step 11:

Then add one teaspoon ginger-garlic paste. Stir and fry the spices until the raw aroma of the paste disappears.

Step 12:

Then add chopped tomatoes into the pan. You can lower the flame into medium-low. Cook the tomatoes for about 4 minutes until they get mix with all the spices.

Step 13:

Now add one-fourth teaspoon of turmeric powder, half teaspoon of chili powder, half teaspoon of coriander powder, and half teaspoon of garam masala. Mix the powder spices with tomatoes and onions. Cook them for 2 minutes.

Step 14:

Then add chopped capsicum cubes. Stir and cook for 3 minutes until capsicum becomes soft.

Step 15:

Now, add all the vegetables you steamed into the pan. Stir to coat all the vegetables with masala. Add salt as per your taste. If required, you may add half a cup of water. Allow the vegetables to cook in low-medium flame for about 5 minutes. Keep stirring vegetables in an interval.

Step 16:

After the vegetable is cooked, add chopped coriander leaves. Check the taste, you can adjust the salt if required.

Step 17:

Grate the cheese, then add it to the vegetables. You can use it as much as required. Mix it well with the vegetables. After the cheese melts, turn off the flame.


Step 18:

Now you can make the wrapper of kathi roll. Make a medium size ball out of dough. The size of the ball depends upon the size of the wrapper. So, you can adjust it as per your convenience.

Step 19:

Roll the dough into flat circles.

Step 20:

Heat the tawa, then place the wrapper on it. Cook the wrapper on medium flame. Flit it until it is done. Spread the wrapper with oil before removing it from tawa. Follow the same process for the remaining wrapper.

Step 21:

Place the vegetable horizontal on the center of the wrapper. Sprinkle few pinches of chaat masala on the top. Then add marinated onion on the top of the vegetables.  

Step 22:

 Roll the wrapper into a cylinder shape. Follow the step for the remaining wrapper.

Your veg kathi roll is ready to be served.
